I continue to make Amy's homemade granola, and everyone loves it. Here is the slightly
adjusted recipe that I use....

  1. In a large bowl, combine three cups of oats (e.g. Quaker Oats), one cup of
    walnuts, one cup of slivered almonds, and one cup of coconut.
  2. In a measuring cup, combine a half cup of pure maple syrup (must be
    PURE maple syrup), 1/4 cup of cooking oil, and 3/4 teaspoon of salt -- mix.
  3. Blend the liquid mixture into the oats and nuts.
  4. Spread the mixture on cookie sheets and bake at 250 degrees for one
    hour and 15 minutes, stirring the mixture every 15-20 minutes.
  5. Add two cups of dried fruit AFTER the mixture comes out of the oven. Dried
    cherries, blueberries and cranberries work well, as do raisins.

 


Mom peels carrots for some potatoe and sausage soup we are making. (I still eat
meat at mom's.)

 


A bowl of our soup -- using a chicken broth base with sliced potatoes, celery,
carrots and some instant mashed potatoes for thickening.

 

Some Recent Cooking Exploits

Gail has spent over a month as a vegetarian (she doesn't eat anything with eyes, except potatoes). I have been experimenting with some vegetarian recipes. I decided it was crucial that I learn to make a tasty vegetable stock -- but it is hard to get a good-tasting broth using only vegetables and spices.

The pot to the left, my first attempt at making vegetable broth, turned out to be a very tasty vegetable soup. I am adding fresh parsley that is still growing in my garden.
